This is so, so easy that I feel a little Bad when I make it because it requires so little effort, but the results are delicious.

Ingredients

2 litres good-quality vanilla ice cream, softened but not melted
150 ml Basic Lemon Cordial

Gluten-free
ice cream
Vegetarian

Method

Transfer the vanilla ice cream to a large bowl and stir. Using the same container that the ice cream came in, spoon one-third of the softened ice cream back into the container and smooth the surface.
