I can’t think of a soup more comforting than a velvety potato and cheese soup. This one hits just right. The cauliflower lightens it up, and the pickled mustard seeds add acid and pop that make you want to go back again and again for another bite.

Ingredients

  • 2 Tbsp olive oil
  • 1 yellow onion, chopped
  • 3 garlic cloves, minced

Method

  1. In a large stockpot or Dutch oven over medium-low heat, warm the oil. Add the onion and sauté until soft and translucent, 5 to 7 minutes. Add the garlic, thyme, 1 tsp of the salt, and the pepper and sauté until fragrant, 30 seconds.
