Ricotta Gnocchi with Vodka Sauce

Did you miss the dairy in my Roasted Tomato Soup recipe? Don’t fret: This vodka sauce makes up for it with plenty of heavy cream. Don’t skip the step of draining the ricotta, or your gnocchi will be too wet and likely to fall apart when boiling. If you are short on time, feel free to use store-bought gnocchi. This dish will still be delicious and perfect for an easy weeknight meal.
