Purée leftover soup into a velvety-smooth green dip that is perfect for snacking. Serve it with crackers, chips, or raw veggies as an appetizer or a quick bite. Or, spread it on thick slices of bread, top with roasted veggies or marinated radicchio, and pair with a side salad to make a complete meal. Don’t skip the draining step; it’s always much easier to add a little extra water if it’s too thick than to save it from being too thin!
