Pumpkin helps fill out this soup with extra volume and nutrients without overpowering the coconut flavor. As written, this recipe is perfect for weeknight meals, but if you are wanting to create a richly over-the-top version as a starter for guests, feel free to add an additional can of coconut milk. I find this to be too rich as a main weeknight meal but absolutely divine as a small shooter serving.
