This was my all-time favorite soup growing up. Since most restaurants use beef broth to make it, when I stopped eating meat as a teenager I quickly realized that I needed to create my own recipe. To replace the rich and deep beef broth that is usually associated with this soup, I add some umami and salty punch to the mix with vegetarian Worcestershire sauce and tamari. The splash of sherry really does add to the flavor, so I recommend not skipping if you can.
