This is one of my favorite soups to turn to when I’m craving something nutritious and simple. I love the way French lentils hold their shape a bit better than other lentil varieties, so make sure you are using them in this recipe.

Ingredients

  • 1 Tbsp olive oil
  • 1 yellow onion, diced
  • 2 celery stalks, diced</

  1. In a large Dutch oven over medium heat, warm the oil. Add the onion, celery, and carrots and sauté until softened, 5 to 7 minutes. Add the garlic, thyme, paprika, salt, and cayenne and sauté until fragrant, 30 seconds.
