This recipe is not for the impatient. Peeling a large amount of shallots is no quick task (in reality, it takes 10 minutes or so but it feels like a rather long time when you are in it). But if you have the time and patience, this dish is wonderful. The onions slow-cook in olive oil, lemon, and thyme and then are spooned over your leftover lentils for a stunning side dish.
