Can you tell I didn’t know what to name this recipe? It’s made in the same way you’d make a vinaigrette-based potato salad, but while traditional potato salads are mostly just potatoes (obviously), this salad is more vegetable-heavy while still being prepared in the same way as a potato salad.
The tangy vinaigrette brings freshness to the leftover vegetables while the celery adds new crunch and jammy eggs fill it all out. I like to reheat the chowder in its liquid to get the vegetab
