The key to this beautiful salad is layering, both for presentation and for building flavor. We start with a bed of smooth and tangy goat cheese verde sauce. We then toss crunchy and juicy vegetables in the bright and slightly spicy lemon vinaigrette and arrange them over the sauce. We top it all off with fresh soft herbs (use mint, dill, or basil or a mix depending on what is looking the freshest) and crunchy pistachios. To me, this is summer on a plate.
