Since eggplants abound during warmer months, I knew I wanted to include an eggplant soup in the summer section of this book. My favorite way to enjoy eggplant is when it’s blended with lots of spices and creamy tahini into an irresistible baba ghanoush. Thus, my inspiration for this soup was born.
