Corn casserole is always my favorite Thanksgiving side, and I’ve often wondered why we reserve it for the holiday season. I’m hoping to change that mindset, so I’ve started to make this corn pudding in the summer, when corn is actually at its peak. This version is a bit more egg-heavy than the usual holiday side; I find it works perfectly as an easy vegetarian main dish since it borders on frittata territory.
