Inspired by my G.O.A.T. favorite salad from a now-closed local burrito place (where it was dubbed “Highway to Kale”), here’s my addictive rendition. I recommend using dinosaur kale (also sometimes called Tuscan kale or Lacinato kale) here, as I find it to be easier to clean and perhaps even a bit milder than other widely available varieties.
