Is it a salad or a slaw? Maybe a bit of both, and why not? By roasting some of the Brussels sprout leaves, you end up with crispy leaf chips that are a delicious contrast to raw shredded sprouts. I use cheese a lot in this book, so I left it out here because the salad was delicious without. But I doubt anyone would complain if you wanted to toss in a handful of crumbled feta or cubed provolone.
