Unlike traditional dosas, which require hours of soaking and fermenting, these crispy crepes don’t need fermentation. Made with whole wheat flour (atta), rice flour, and spices, they are ready in minutes, making them a great, healthy meal for when you’re short on time.

Ingredients

  • 1 cup whole wheat flour
  • ½ cup rice flour
  • 1 onion

Method

In a large mixing bowl, combine the whole wheat flour, rice flour, onion, green chiles, ginger, curry leaves, asafetida, black pepper, and salt, to taste.

Stir in 2 cups of water to make a lump-free batter. The batter should be of pouring consistency and not very thick. It should be thinner than regular dosa or pancake batter.
