A dish from the royal kitchens of Awadh, Dum Pukht Gosht is a slow-cooked mutton curry where tender meat absorbs rich, aromatic spices over hours of cooking. The term dum pukht means “slow-cooking in its own steam,” and the process results in a luxurious, melt-in-the-mouth dish. Whenever I make this, I picture a slow-simmering handi filled with fragrant spices, just like in the Nawabi era!
