A festive and celebratory Indian bread, Puri is a crispy, deep-fried whole wheat bread that puffs up beautifully and pairs well with curries and sweets. My fondest memories of puris are from childhood Sunday brunches with a bowl of aloo sabzi and halwa!

Ingredients

  • 2 cups whole wheat flour
  • 1 teaspoon kosher salt
  • 3 teaspoons

Method

In a large bowl, combine the flour and salt, then add 2 teaspoons of oil. Add a little water at a time to the flour mixture and knead well to make a firm and smooth dough.

Add 1 teaspoon of oil to coat the dough and knead again. Cover and set aside for 15 minutes. Punch down the dough, knead for 1 minute more. Divide the dough into 20 equal portions.
