A must-have for chaats, Tamarind Chutney is a sweet, tangy, and slightly spicy sauce made from tamarind pulp, dates, jaggery, and spices. It’s a staple in my kitchen, especially when making chaat, samosas, and pakoras.

Ingredients

  • 1 cup dates, pitted
  • ½ cup jaggery
  • ¼ cup

Method

In a pressure cooker, add the dates, jaggery, tamarind, and 1 cup of water. Pressure-cook for 3 to 4 whistles. Turn off the heat and let the pressure release naturally. If using an electric multi-cooker, set the timer for 15 minutes.

Using a handheld blender, blend the date mixture to a coarse consistency. Alternatively, put in a blender jar and blend.
