After our twins were born, I used to make tons of this curry and keep it on hand when we were too exhausted to cook (most nights) and for the endless trail of friends who came to see our bundles of “double happiness.” The amount of curry paste you’d like to use is up to you, but I recommend enough in this recipe for medium heat. Feel free to reduce or increase depending on your heat threshold. I recommend Mae Ploy or Maesri brands.
