Chicken Prik-King is a classic Thai dish fit for a King (or a Queen). It’s incredibly easy to make but bursting with flavor. Double the amount of curry paste for more intense heat. The food in Thailand is much spicier than what you encounter at Thai restaurants in America. I remember having this dish in Bangkok and my forehead alone made it a three napkin affair! You could use shrimp, beef, or pork in this dish or a combination.
