Ingredients: 4 oz (100 g) cleaned calamari, cut into rings; 1½ lbs (740 g) fresh flat rice noodles; 6 medium-sized shrimp, peeled and deveined; 1 tablespoon fish sauce (nam pla); 1 tablespoon oyster sauce; Fresh coriander leaves (cilantro) for garnish; ¼ cup (32 g) all-purpose cornstarch mixed with ½ cup (125 ml) water; 4 oz (100 g) baby scallops; Thinly sliced green onion for garnish; 2 tablespoons oil; 1 tablespoon yellow bean paste (optional); 6 oz (175 g) broccoli florets; 1 tablespoon sugar; Pinch of white pepper; ½ teaspoon dark sesame oil; 1 teaspoon all-purpose cornstarch; 2½ cups (625 ml) Basic Chicken Stock or store-bought; 2 garlic cloves, minced; 1½ tablespoons dark soy sauce

Rad na are thick rice noodles covered in generous gravy which is very similar to a classic Chinese chow fun dish. This is a mild, stir-fry noodle dish which appeals to more conservative palates and young kids. Feel free to serve along with some Srircha if you wish. Rad na noodles can be found all over Thailand and is therefore considered a national dish.
