I love to make this home-style Thai dish on rainy afternoons in LA, which brings back memories of the torrential rain showers we experienced strolling around Bangkok on our honeymoon. Pad See Ew, also known as River Noodles, are made with wide, flat rice noodles and are the ultimate in Thai comfort food. The key is using dark soy sauce which has been aged longer and is thicker and less salty which imparts a rich, complexity to this simple dish.
