Chinese broccoli, or gai lan, is a leafy green vegetable which has a peppery bite with a hint of sweetness. It can be found at Asian markets and some specialty markets. At Chinese dim sum restaurants, they cut the broccoli at the table in front of you with a pair of scissors followed by a quick drizzle of oyster sauce. This preparation melds together classic Thai flavors with the sweet crunch of cashews sprinkled on top.
