This is a spicy dish with a unique texture. The tofu is flash fried in a mixture of flour and cornstarch giving it a nice crispy crunch with every bite. This is another great meatless option filled with complex flavors and is chock full of soy protein.

Ingredients

  • 8 oz (250 g) yard-long beans or green beans, cut into 1 in (2.5 cm) pieces
  • 2 tablespoons

Method

  1. Cook the green beans in boiling water until tender-crisp, about 5 minutes. Transfer the beans with a slotted spoon to an ice bath until cool. Drain. Set aside.
  2. Combine the flour, all-purpose cornstarch, and salt in a bowl. Toss tofu pieces into the flour-cornstarch mixture. In a wok or deep skillet, heat the oil to 375°F (190°C).
