My pastry chef/instructor friend, Theresa Frederickson takes the cake! Not only has she done a stint at Spago, she bakes awesome cakes, including a giant Curious George cake she made for the twins’ 3rd birthday party. I asked her for her coconut cake recipe. Moist and delicious, this cake is made with creamy coconut milk and is drizzled with a sweet and juicy mango sauce for just the right finish.
