Napa cabbage, also known as Chinese cabbage, originated in Beijing; my mother always told me it was a symbol of prosperity. It has an oblong shape (similar to a gold ingot, which may be what connects it to prosperity) and thick, crisp stems with frilly yellow-green leaves. It tastes a bit sweeter than other kinds of green cabbage, and it’s great in salads as well as cooked foods. I pair Napa cabbage with red cabbage in this recipe, along with the slivered almonds and Asian pear, for a color
