Did you know that bok choy is super-duper nutrient-dense? It’s loaded with vitamin A, anti-oxidants and Omega-3s. I think my mother was ahead of her time. She cooked bok choy for us at least once a week. She knew she had to build up our immune systems for the harsh Minnesota winters! This delicious and healthful dish is easy to make. Serve it with steaming-hot brown rice for an even more nutritious meal.
