I’ve been told that these noodles are a Cantonese creation; no one is quite sure how Singapore got involved in its name. This is an earthy dish made with rice noodles stir-fried with curry powder, bean sprouts, shrimp, BBQ pork and vegetables. Wherever these noodles came from, they are incredibly flavorful and easy to make. You can find them all over Hong Kong, in restaurants and open-air night-market stalls.
