Fun means “wide rice noodle” in Chinese. The difference between this noodle dish and, say, chow mein or lo mein is that Chow Fun is made with flat, wide rice noodles which are chewy and fresh and soak up the flavor of the surrounding sauce. This is one of my favorite noodle dishes. It reminds of me of family lunches at our favorite yum cha (a restaurant that serves dim sum and literally means “drink tea”) joints in Minneapolis that we went to after we got out of Chinese school
