My mother used to tell me about eating lychee nuts with her friends on hot summer days when she was growing up in China. I’ll always have a fondness for lychees because they make me think of Mom being young and carefree. Although this dessert is easy, it takes a little time. Trust me, though: it’s worth it. It’s a refined and refreshing finish to a heavy Chinese meal, and your guests will “Ooh” and “Ahhh” at your magical sorbet-making talents.
