Here’s a really quick soup to make. After all, the peas only take about 3 minutes! The soup takes a little longer to finish, but only a few minutes more.


  • 450 g (1 lb) frozen peas
  • 1 large onion, finely chopped


Cook the onion in a knob of butter for a few minutes, without letting it colour, until softened. Add the stock and bring to a rapid simmer. Add the peas now and cook on a fast heat for 3 minutes. Once the peas are soft and tender, season with salt, pepper and sugar and then liquidize to a smooth consistency. For an even smoother finish, push the soup through a sieve.
