Ceps are popular and grown all over Europe; they are known as cèpes in France and porcini in Italy. They are one of the best wild mushrooms, packed with flavour, and they need very little else to help them. Ceps can be bought fresh or dried; the dried are a lot easier to find – the fresh ones are only available in season from Summer through to early Winter.
