This soup is entitled main course because that’s exactly what it could be. It could also become a creamy casserole. What I love about this dish is the way in which it creates its own stock – packed with flavour from the chicken and the vegetables.

Many other ingredients can also be added – spaghetti, macaroni, rice, tomatoes, basil and more!
