Leeks are known as ‘poor man’s asparagus’, a vegetable to stand in for or replace the lovely green spears. I think leeks are a wonderful vegetable, so I thought I would treat them both as equals.

These don’t have to be grilled; simply boiled and rolled in butter or dressing, they will still eat very well. The parsleyed eggs are hard- or soft-boiled eggs, chopped, and flavoured with olive oil, parsley and lemon. A good twist of pepper and a sprinkling of sea salt and you have a compl
