The bittersweet onion tart stands completely on its own as an idea and dish. The pastry is of a shortcrust variety, enriched with the flavour of black pepper to just give it a tasty bite.

The leek, tomato and lemon dressing is a combination of flavours that go very well with the tart. I also like to add mushrooms to the dressing for even more texture.
