This is one of Britain’s favourite potato dishes, along with good creamy mash! Roast potatoes are a weekly institution in every family. It is our standard procedure: Sunday lunch means roast potatoes! And quite right too. Good roasts are just irresistible, hot or cold.

The first question normally asked is which is the best potato to use? Almost any potato will roast, but for the perfect, crispy finish, I use Désirée, King Edward or Maris Piper – all are easily available.
