Curly kale is a green, cabbage-like vegetable, grown in the Winter and early Spring. It is similar to Spring greens in flavour but with a thicker and firmer texture. When raw, it has a ‘curly’ parsley look about it.
Although similar to Spring greens, curly kale holds its own texture and flavour and keeps an amazing deep green colour when cooked. I like to eat it just boiled and then tossed in butter and seasoned. It can also be used in stir-fries (once blanched) and mixed with spice
