This recipe is a vegetarian version of the spicy fried chicken in Open Rhodes. I was cooking for some friends and had decided to keep it simple with spicy fried chicken, rice, salad and naan bread. One friend was a vegetarian, so I made this with florets of cauliflower and finely chopped sweet peppers to finish. It turned out a winner, so here’s the recipe.
