The recipe I am giving you here actually cooks the pears in a caramel syrup. The pears can also be cooked in a basic stock syrup and, once cool, caramelized with icing or caster sugar under the grill or with a gas gun.

Bring the sugar and water to the boil and continue to boil fast until it turns into a light golden caramel. Add the pears along with another 6 tablespoons of water and continue to cook for 15 minutes until the syrup turns into a darker, richer coloured caramel. Remove from the stove and leave to coo
