Put the chocolate pieces in a bowl. Bring the water, sugar and glucose to the boil and pour onto the chocolate pieces. Stir until the chocolate has melted, and allow to cool and then chill in the fridge. The sorbet mix is now ready to churn in an ice-cream maker which should take approximately 20–25 minutes.
