Pumpkin is a vegetable that is reported to have been used at least 400 years ago. The members of the pumpkin family run into literally hundreds – squash being one of them with marrows and courgettes joining along the way. It is best to select smaller pumpkins for this tart for a richer colour and flavour. Serve with custard, cream or clotted cream.
