This is a classic Sunday-lunch pudding. It is nice and easy to make and will suit the whole family. The lime flavour can be swapped with lemon or orange (add a spoonful or two of marmalade to the sponge mixture, if using orange) and other fruits can be added to the apples – raspberries, blackberries, blackcurrants and so on. I like to serve this pudding with custard, cream or crème fraîche.
