Apples or bananas are probably the most common fruits that are ‘roasted’ to give baked apples and barbecued bananas. Both are excellent, but I thought I would introduce another two. Roasting whole peaches or nectarines keeps all of the fruit texture and the flavour gets even better. The blackberry ice-cream finishes the dish off beautifully.
