This is a quick dessert to make and can be made with the fruit of your choice – peaches, mangoes, Summer berries, etc. The fool can be served in glasses or ramekins. If ramekins, the chocolate sauce can be replaced with grated plain or milk chocolate on top.


For the Fool

  • 8 over-ripe bananas
  • 1 tablespoon lemon juice

To make the fool, purée the bananas in a food processor with the lemon juice. Whisk the egg white if using to soft peaks and then add the caster sugar and continue to whisk to a meringue stage. Whip the double cream to soft peaks and fold with the meringue into the puréed bananas. Pipe or spoon into glasses, leaving at least 1
