Eccles cakes are a classic for our corner-shop bakers and for us to eat! So, why not have a go at making your own? They really are very simple and easy to make and even more delicious to eat.

To lift the basic flavours of currants, sugar and butter, I have added some grated orange zest and a dusting of cinnamon.

Pre-heat the oven to 200°C/400°F/Gas Mark 6.

Roll out the pastry to about 2 mm ( in)
