Bellini is a famous cocktail made from puréed white peach juice and Prosecco, which is the Italian alternative to champagne. These aren’t white peaches I am using but the flavour is fantastic and tastes like an iced cocktail!
Bring the chopped peaches and stock syrup to the simmer. Cook for a few minutes or until the peaches have softened. Add the champagne or sparkling wine and lemon juice and return to the simmer. Remove from the stove and blitz to a fine purée in a food processor or liquidizer. Push the purée through a sieve and leave to cool. Add the milk and churn in an ice-cream machine for 20–25 minutes.
