Here’s another rarebit alternative, others having been featured in the Rhodes Around Britain trilogy. I find this goes very well melted over green vegetables such as cabbage, greens, broccoli and leeks. It also tastes lovely with cauliflower or as a topping for the vegetarian Roast Mushroom and Leek Shepherd’s Pie.
Gorgonzola is an Italian cow’s-milk blue cheese with a mild creamy texture and not too overpowering in flavour. The Cheddar is sti
