Method

Reserve a quarter of the coriander leaves for chopping and adding to the finished sauce. Roughly chop the remaining leaves and stalks and add to the basic butter-sauce reduction with the crushed coriander seeds. Once the sauce has been cooked and strained, add the chopped coriander just before serving.
