This is a basic recipe for a simple dressing that I have used in many recipes. It’s so versatile and has a creamy texture. If you have a favourite mustard – such as English, French or grain – then simply use the one of your choice.

Ingredients

  • 4 teaspoons Dijon mustard
  • 2 tablespoons white-wine vinegar
  • 8

Method

Whisk the mustard with the vinegar. Mix together the two oils and gradually add to the mustard, whisking all the time as you would if making mayonnaise. Once everything is thoroughly mixed, season with salt and pepper.
