This isn’t so much a recipe as a flavouring. Melting this butter over fish or roasted pork or chicken dishes gives the finished result a much fuller flavour, with the crunch from the mustard seeds adding a new texture.


  • 50 g (2 oz) unsalted butter, softened

Simply mix the two ingredients together. This can now be kept chilled or used immediately.
